How to Make the Best Chorizo Burger
This is the ultimate breakfast burger. And yes, napkins necessary.
It's a universal truth that nothing starts the day right like a hearty breakfast sandwich, but if you're pulling into a drive-thru for something off the dollar menu, you can do better. In fact, skip the sandwich idea and make a burger instead. We prefer ours on the spicy side, so here's a recipe for the perfect chorizo and beef patty. Cook it over a nonstick pan–we used an All-Clad 8" Fry Pan (also available in 12")—for easy browning. Grab the classic breakfast add-ons—melted cheese, avocado, a fried egg, hot sauce—and now your day's off to a solid start.

Ingredients
- 1/2 lb. fresh chorizo, removed from casings
- 1 lb. ground beef (preferably 80% lean)
- 1/2 tsp. salt
- 4 tsp. olive oil, divided
- Sliced jack cheese
- 4 eggs
- 1 avocado
- 1 lime
- 1 tsp. hot Sauce
- 4 toasted brioche buns
Directions
- Step 1Combine chorizo, beef, and salt in a bowl. Using your hands, gently combine and form into 4 patties.
- Step 2Heat 2 teaspoons of olive oil in a skillet over medium-high heat. Add the burgers and cook for 3-4 minutes per side, until the internal temperature reaches 165° F.
- Step 3Remove the burgers from heat and top each with a slice of cheese; let rest for about 5 minutes. In another non-stick pan, add the remaining olive oil and heat over medium heat. Once hot, fry an egg for each burger.
- Step 4In a small bowl, mash together avocado, juice and zest of the lime, and hot sauce.
- Step 5Spread avocado mash on each bun and top with a burger. Top with an egg and remaining bun. Enjoy immediately.
